Hunter Valley Blades series San Mai gyuto / chefs knife that’s designed for being an all around performer for every tasks . Every component of these knives are made by me in my shop in Japanese style with forged finish and Japanese handles .
Low carbon clad san mai with 1095 high carbon steel core (not stainless, will rust if not wiped dry) water quenched around 64-65 hrc
Grind : Suitable for both right and left handed users
Edge length : 149 mm
Height at the heel : 38 mm
Spine thickness: 2.4mm above the heel , 1.7mm midway , .4mm a cm before the edge
