This knife is the second biggest knife I have made with 335mm edge , forged from 26c3 ( spicy white steel ) differentially heat treated ( honyaki )  to be used as a slicer for trimming large meats , briskets , fish , sushi etc

finish : 1500 grit hand rubbed finish with an acid etch revealing the banding of the steel and the contrast of the hamon
