255mm wa gyuto in Vtoku 2 stainless clad carbon


255mm San Mai gyuto in Takefu vtoku2 stainless clad carbon steel. Vtoku is a pure high carbon steel containing tungsten and vanadium and it is similar to Hitachi Blue . It is quite abrasion resistant, offering great edge retention and still easy to sharpen
Core steel is carbon (not stainless ) , heat treated to around 64hrc at the edge
Slight asymmetrical ground for best balance between ease of cutting and food release .
Blade is lightly etched to reveal the core steel and the contrast between the cladding and the minimal carbon migration
Perfectly rounded choil and spine for comfort
Handle is octagonal bocote ,
The geometry and the distal taper of the knife is completely forged to shape . This is middle weight knife , slightly thinner at the spine and lighter than my workhorse knives
