240mm Gyuto in Takefu super gold 2 Damascus san mai , ambonya burl handle


240mm (9.5”) gyuto forged from Takefu super gold 2 ( aka r2 ) stainless pm steel with Damascus cladding , heat treated in house to 63-64hrc including cryo. Sg2 is one of the two stainless steels I offer , at this hardness it keeps its edge lot longer than any carbon steel at the same hardness due to the chromium and vanadium carbides in it . Despite the steels abrasion resistance it is not hard to sharpen and gets super sharp . The knife that won the sharpest knife award in Melbourne 18 show was in sg2 as well
Handle is western style made from a beautiful two coloured stabilised ambonya burl with my own mokume bolster .
Blade has a hand rubbed 1500grit finish on it
Perfectly rounded choil and spine for comfort
The geometry and the distal taper of the knife is completely forged to shape . This is middle weight knife , slightly thinner at the spine and lighter than my workhorse knives , it is lot lighter with the ambonya handle around 200grams give or take
