210mm K Tip Honyaki in Spicy white

Here is a honyaki gyuto I have just finished , it’s forged from 26c3 steel also know as “spicy white “ due to similarity of its cleanliness along with the addition of alloys like chromium to increase wear resistance . It gets very hard with the correct heat treatment and beautiful hamons can be achieved
It’s clay quenched and differentially hardened at 64hrc at the edge , the hamon is wavy “stormy “ pattern , it’s not stainless and due to the hardness little extra care needed during use , avoid cutting frozen foods or bones with this knife
Handle is octagonal ringed gidgee with Bronze spacers
The knife is convex ground suitable for both right and left handed users .
